Executive Chef /
Partner, Peter Millette started cooking in his mother's kitchen at the age of 7 and formally trained at the Western Culinary Institute in Portland, Oregon with an emphasis on continental and classic French cuisine.

Before joining the Fritzs in 1994 as Executive Chef at the Uptown Grill, Peter held chef positions at Pepi's and Sweet Basil in Vail, and saucier post ions at the Riverplace Alexis Hotel in Portland and the Oxford Hotel in Denver.

He was the featured chef at the 1999 Taste of Vail and served as the chef for the prestigious Founder's dinner at the Taste of Vail's 10th anniversary.

Peter's imaginative regional menus and daily specials are sure to satisfy his old clientele while building a new clientele that will soon find out what they've been missing out on all along.
