Up for an overnight from Denver, we absolutely loved the Poblano Chile Relleno and the Prince Edward Island Mussels (your fabulous Thai rendition) for starters, and the Hoisin Braised Beef Short Ribs as an entree with Grilled Asparagus as a side. This was a wonderful eclectic range of cuisines, executed by the kitchen with perfection in all respects.
Stellar tastes with every dish in our opinion!! And we're not very easy to please.
Wow, somebody (everybody?) here really knows what they're doing.
We know we've got to be back soon!

Dear Susan,
I wanted to write to thank you for the wonderful time we had at Sapphire Restaurant for our Family Reunion dinner.
After the day you and Chef Peter met with me to plan the meal, this was the one weekend event that I felt I no longer needed to worry about. And I was right, from the moment we arrived everything was ideal. I didn’t have to worry about a thing and could enjoy the evening with my family.
The menu selections met everyone’s tastes, Chef Peter’s food was wonderful (as usual!), and the staff was friendly and helpful. The room off to the side was perfect for a group of our size. We could move around and socialize without disrupting your other diners, yet it is open enough so we could enjoy the ambience of your restaurant without feeling ‘tucked away’. Many of my family have commented to me about how much they enjoyed the evening – not only the food, they really enjoyed the atmosphere of the restaurant.
Thank you for providing such a successful evening. It was, in a word, PERFECT!

I was in this past Friday night with a party of 11 to celebrate a very special event and wanted to pass along our collective thanks.
Three tables were combined last minute to allow our group to sit together which was greatly appreciated. The wine selection offered was perfect, entree's were simply delectable across the board and the service (Reed and Derek) could absolutely not have been better.

Fans of great skiing and eating have a new jewel in Vail: Sapphire Restaurant & Oyster Bar. Joel and Susan Fritz have created a restaurant of unmatched appointment and quality in the heart of Vail Village.
The menu features everything from sushi quality Tuna seared to perfection to parmesan encrusted Veal Chop, large and perfectly prepared. Tender Loin of Pork, Free Range Chicken Breast and Beef Tenderloin are also featured. I consider myself a pretty good judge of outstanding eats. Everything was great. The desserts are so artfully presented you almost do not want to eat them. But do so!
Sapphire is a spot of quiet, comfortable elegance (perfect after a day on the slopes) with a modern makeup and long bar with wine list to match. Chef Peter Millette literally works magic there. The motto is "good stuff on a plate with wine to match." Clearly an understatement!
